TOFU SCRAMBLE

This delicious and filling egg-alternative is a great way to start your day. Done in 10-minutes.

INGREDIENTS:

  • 115g of firm tofu

  • 1-2 tsps extra virgin olive oil

  • 1 stalk of spring onion, sliced

  • 2 cloves of garlic, crushed

  • 45g of chopped roasted peppers or tomatoes

  • 1 tsp of paprika, turmeric, soy sauce, sriracha, fresh basil, oregano & parsley

  • 1 tbsp of nutritional yeast

  • 1 tbsp hemps seeds

  • Salt & pepper to taste

METHOD:

  1. To begin you need to press out the tofu to reduce the amount of liquid within. Wrap your tofu in paper towel or an absorbent tea towel and place a heavy plate or bowl on top of it to help squeeze out the liquid - leave this for about 10-15 minutes or even overnight to prepare.

  2. Next, heat up the olive oil in a frying pan of medium to low heat. Once hot start to sauté the garlic, spring onion and roasted peppers/tomatoes. Meanwhile use a fork to crumble the tofu.

  3. Once the garlic is lightly browned add in the tofu, herbs and spices, sauces and nutritional yeast, and mix around until everything is combined.

  4. Continue to fry the tofu for about 5 or so minutes or until you’ve reached your desired texture.

  5. Serve with a sprinkle of hemp seeds, sautéd greens and toast for a full and nutritious breakfast, or alternatively you could use this in a buddha bowl, salad, etc. for lunch/dinner.
