THE ULTIMATE CHUNKY VEG SOUP

Prep Time: 10 minutes Cook Time: 35-45 minutes Serves: 6

Ingredients:

  • 1/2 red onion, diced

  • 3 cloves garlic, crushed

  • 1 tbsp olive oil

  • 2 cups diced pumpkin

  • 2 cans of tomatoes

  • 5 cups of veggie stock (vegeta gourmet stock powder is legit the BEST)

  • 1 cup red split lentils - soaked in boiling water for at least 30 minutes

  • 1/2-1 cup capsicum, diced

  • 1 carrot, sliced

  • 1 zucchini, sliced

  • 1 cup kale, chopped

  • 1 portobello mushroom, diced

  • 1 tsp each of paprika, cumin, turmeric, onion powder, oregano, basil

Method:

  1. In a large pot, heat up the olive oil on medium heat and sauté diced onion and crushed garlic until clear

  2. Add the diced pumpkin, cans of crushed tomatoes and veggie stock. Bring this to boil, reduce the heat and let simmer for 15 minutes

  3. Meanwhile, chop up all the veggies and once the 15 minutes is up and the pumpkin has started to soften, add all other ingredients

  4. Bring to boil and then let simmer for 20-30 minutes and your soup is ready to go
